Fruit Summer Pops

I strongly dislike the heat and I live in Texas! Any day of the week, I will always choose to be cold rather than hot. I always have the AC in my car on full blast and sleep with my fan on high. All of that being said, summer is my least favorite weather season. It’s just so hot. All the time. Thankfully, there is air-conditioning, pools and popsicles. With these three things, I somehow make it through the blazing Texas summers every year.

I have an obsession with cute, colorful pops and when I was scrolling through Pinterest the other day, I saw these and went to buy all the stuff to make them the next morning. Side note: I am lactose intolerant so I chose Soy yogurt (actually delicious) but you can definitely use Greek Yogurt or any other yogurt you love. Another side note: if you don’t have a popsicle tray or popsicle sticks, use plastic cups and plastic spoons – works just as well.

What you need:

Fruit of your choice (I used mangos, kiwi, strawberries and blue berries)

Any form of yogurt

Plain granola (optional)

Honey (optional)

Popsicle sticks

Popsicle trays

How to make:

1. Slice all of your fruit up.

2. Once your fruit is sliced, get ready to make your pops! Simply add the granola, honey, fruit and yogurt in the pops as desired. Make sure that you add enough yogurt to hold everything together.

3. Fill the pops to the top with ingredients and place your popsicle stick in the center. Stick the pops in the fridge for about 3-4ish hours.

4. When you are ready to take the pops out they may not come out of the tray easily. Fill a large bowl with warm water and place the pop tray in the water for 40 seconds or less. After this, the pops should come right out. Enjoy!

These are perfect for pool parties and late night snacks when you need something sweet but want to be healthy. These also help me get through the hot Texas summers each year!!!
